Material:

Yick Cheong Tai O Chilli XO sauce

150g snow peas

50g cloud ear

30g dried shrimp

50g cashew nuts

 

Seasoning:

Salt

sugar

liquor

Oyster sauce

Instructions: 

  1. Wash snow peas and remove the stringy ends.

  2. Toast cashew nuts in a dry pan until golden brown. Set aside.

  3. Soak dried shrimp in water for 5 minutes until slightly softened.

  4. Heat a bit of oil in the wok, stir-fry the dried shrimp, then add snow peas. Season with a pinch of sugar and salt.

  5. Add soaked black fungus and a splash of cooking wine.

  6. Stir in oyster sauce and Yick Cheong XO Sauce to taste. Continue stir-frying until evenly coated.

  7. Add the toasted cashews at the end and stir well before serving.
