Storage: No refrigeration required. As you work through the jar, the oil level will drop — simply top it up with cooking oil or raw oil as needed, with sesame oil being the best choice. Keep the bean curd fully submerged in oil to maintain freshness and prevent discolouration. The more you top it up, the better it tastes over time.
